Winter Cheeses!

Our cheesemonger, Stefania, has put together an amazing selection of cheeses to get us through the end of the year. They are available in our retail shop and featured on our cheese boards in the wine bar, so come on by and check them out.

NOVEMBER + DECEMBER 2025 CHEESES:

• Cowles 

A dense and tangy goat’s milk cheese dusted with vegetable ash for a touch of minerality. 
Goats Milk. Pasteurized. Farmstead. Barn First Creamery in Westfield, Vermont.

Pair with: Sauvignon Blanc, Chenin Blanc, and light and earthy red wines like Gamay and Nebbiolo.

Wild Rosemary

This aromatic spanish-style cheese will leave your guests saying ‘what cheese is that.’ Hand pressed with freshly dried rosemary and EVO. Hints of lemon and olive brine. 
Mix of Goat and Cows milk. Pasteurized. Farmstead. Goat Rodeo in Pittsburgh, PA.

Pair with: Spanish or Portuguese red wines, think Douro or Mencia.

• Marieke Aged Gouda

Buttery, sweet and nutty. A crowd pleasing semi firm cheese for the gouda lovers in your life. 
Cows Milk. Raw. Farmstead. Marieke Gouda in Thorp, Wisconsin. 

Pair With: This is the perfect cheese for any of our Orange/ Skin Contact Wines!

• Noblette

Don’t want to be too adventurous? Then this oozy brie is for you. Smooth with hints of white button mushroom.
Cows milk. Pasteurized. Farmstead. Calkins Creamery in Honesdale, PA.

Pair with: Sparkling wines, specifically traditional method (Champagne) or DOCG Prosecco.

• Honeybell

Like eating a delectable cheesecake. Tart and fluffy. Pressed with dried chamomile flowers.
Cows Milk. Pasteurized. Valley Milkhouse in Oley, PA.

Pair with: a chillable red like a Lambrusco, Carbonic Tempranillo (or Carbonic  anything/ glou glou) and Zinfandel. 

• Urdang

Slightly pungent and fudgy in texture, this beer-washed goat's milk cheese will remind you of a taleggio.
A beefy comfort cheese for the colder months.

Pair with: Sparkling wine, specifically Pet Nat. Also any wine with lots of acidity like a cool climate Chardonnay or Pinot Noir.

•Birchrun Blue

An approachable crumbly blue modeled after a Stilton. Earthy with hints of raw walnuts. 
Cows Milk. Raw. Farmstead. Birchrun Hills Farm in Chester County, PA.

Pair with: This cheese calls for white and reds from Bordeaux or a Barbera or Sangiovese from Piedmont or Tuscany.
